Egg in Broccoli Soup

I like an egg in my broccoli soup. An egg poached in a soup tastes the best to me... both egg yolk and egg white are so soft.


Ingredients (for 3 persons)

broccoli                                  1               
cheddar cheese                     3 slices
egg                                         3              
butter                                     40g
wheat flour                             40g           
milk                                        400ml


1. Blanch the broccoli (put the stalk first and then flower heads)


2. Put the above in icy water.

3. Place all the stalk and half of flower heads in a blender with 200ml of milk and blend it.



4. Cut the remaining flower heads roughly.

5. Make a roux on a pan (melted butter - flour - milk). Add the above (3 and 4) to the pan and boil it.



6. Put cheddar cheese in the soup.



7. When the soup boils, crack 3 eggs and place them on top of the soup.


8. Boil the above for 1 minute. Then, put the lid on and turn off the heat. Leave it for several minutes depending on how you like your egg.
